- 1 tsp pumpkin pie spice (cinnamon, ginger, nutmeg would work too)
- 1/4 tsp vanilla extract ( almond extract would work)
- Pinch of salt (optional)
Instructions:
- In a small saucepan, combine almond milk, pumpkin puree, maple syrup, pumpkin pie spice, and vanilla extract.
- Heat over medium-low heat, mixing constantly until the flavors are well mixed. Do not boil.
- Remove from heat and let it cool slightly. Transfer to a jar and refrigerate for at least 1 hour before using. This allows the flavors to meld and thicken.
- You can personalize the spice blend:
- Increase or decrease the amount of pumpkin pie spice.

How to Prepare Pumpkin Puree
Step 1: First, you have to choose your pumpkin to create pumpkin puree. The criteria to choose a pumpkin to make this pumpkin puree is to have the sweetest pumpkin. You can trust me on this, it will give you a better taste afterwards. The bigger the pumpkin the variety of tastes you will get.
Step 2 The next step is to slice the pumpkin in half and pull out all the seeds in another bowl. Make sure there is no other seed in the bowl.
Step 3 Now, is the most important part. Lay your pumpkin pieces (2 pieces I am guessing) flat on a baking sheet(face up or face down doesn’t matter). Roast them in a 350-degree Fahrenheit oven for about 45 minutes or until they’re fork-tender.
When roasted to our desired level, let the pumpkin pieces cool down. When it’s cool enough to handle peel off the skin of the pieces.
Step 4: Now you need to mash the pumpkin. So if you have a blender then put the pumpkin pieces in the blender and blend them well. Do not liquidify it, do not keep it too hard. Blend to a level that it is neither too hard nor too liquid. You can add a splash of water if you think it’s not soft enough. You can do this process through other means too, like mashing a potato to mashing a pumpkin.
To store the pumpkin puree put 1 cup of puree in each plastic bag and keep them in the freezer.
